Anda Bread (Bread Omelette)


 

Anda bread or bread omelette is one of the most common foods that is great for breakfast, snack or even lunch. It’s a common street food too and has many variations in the way it is cooked. Everything that goes into making this quick and easy dish can be varied according to your liking – change the type of bread used, the veggies you add into the eggs, skip the cheese or add lots of it – make it just the way you like it. To make bread omelette, I use mint chutney as a spread and it adds great taste to it. You may choose to skip it.

This delicious dish is great for lunch boxes too, especially when you don’t have much time or run out of ideas. With just a handful of ingredients and a few minutes, you can whip up a tasty dish that will fuel you for the day. Make this for a busy weekday breakfast of pack it for lunch and you have happy tummies at home 🙂

 

 

Ingredients:

Eggs – 3
Bread – 4 slices (I have used multigrain bread)
Onion – 1 small, chopped
Tomato – 1 small, chopped
Green chilli – 1, chopped or to taste
Coriander leaves – a few
Salt to taste
Pepper – 1 tsp
Mozzarella cheese – 2-3 tbsp, shredded
Mint chutney – 2 tsp
Butter to fry the bread

Method:

  1. Crack the eggs in a bowl and add salt and pepper. Whisk them well
  2. Add onion, tomato, green chilli, and coriander leaves. Mix well
  3. Heat butter in a fry pan. Add half the egg mixture and let it cook
  4. Once the omelette is almost done, carefully fold it from all sides to form a square (almost the same size as the bread slice). Set it aside and make another omelette with the remaining egg mixture
  5. Add 1 tsp butter and place a slice of bread. Carefully spread 1 tsp of mint chutney
  6. Place an omelette onto it and top it with cheese
  7. Place another slice of bread and add some butter on top
  8. Carefully flip it and roast on both sides until it is golden
  9. Cut into half and serve
