Baingan Bharta


Baingan bharta is a smoky rustic dish that is similar to the arabic dish baba ghanoush. It is prepared by mincing eggplant which has been charred over direct fire. The charring infuses a smoky flavour into the dish. The smoked and mashed eggplant is then cooked with onion, tomatoes, few spices and finished with coriander leaves. The subtle smoky flavour that is infused into this dish by charring the eggplant is what makes it so different and delicious.

Baingan bharta tastes really good with roti/chapati. We love this dish for its simplicity and taste. A great dish to make you love eggplants!

 

 

Ingredients:

Eggplants – 2 large
Onion – 1 large, chopped
Tomato – 2 large, chopped
Oil – 2 tbsp
Cumin seeds – 1 tsp
Ginger – ½ inch piece, grated
Green chilli – 1-2 or as per taste, chopped
Kashmiri red chilli powder – 1 tsp
Salt to taste
Coriander leaves for garnish

Method:

  1. Wash and pat dry the eggplants. Using a fork, prick the eggplant all over
  2. Roast them on an open flame until they become soft and completely charred
  3. Let it cool completely. Peel the skin off the eggplant and roughly chop the soft flesh
  4. Heat oil in a fry pan or kadhai. Add cumin seeds and let it splutter
  5. Add onion and fry until it is translucent
  6. Add ginger and green chilli. Saute for a few seconds
  7. Add tomatoes, red chilli powder and salt. Cook until the tomatoes are soft and pulpy
  8. Add the eggplant and mix well. Cook on medium flame for 5-6 minutes. Keep stirring at regular intervals
  9. Garnish with coriander leaves and serve hot
