Butter Chicken 2


Butter chicken or murg makhani is one of the most popular Indian curries across the world. Soft succulent chicken pieces that are marinated, then cooked in a tandoor or oven and simmered in a creamy mildly spiced tomato gravy – this dish will surely win your heart.

To make butter chicken, I marinate boneless chicken thigh pieces in a mix of yogurt and spices overnight in the refrigerator. I then skewer and grill them in the oven. I make a rich gravy with butter, whole spices, tomato and cream, and simmer the grilled chicken pieces in it.

It is really important to marinate the chicken pieces for a long time to make them soft, melt-in-mouth. I prefer marinating them overnight, and recommend a minimum 4-6 hours marination for this dish.

Ingredients:

Chicken thigh – 500 grams, cut into 1 inch pieces

For marinating:

Yogurt – 4 tbsp
Ginger paste – 1 tbsp
Garlic paste – 1 tbsp
Oil – 1 tbsp
Kashmiri red chilli powder – 1 tsp
Tandoori Chicken masala – 1 tbsp
Salt to taste

For the gravy:

Butter – 3 tbsp
Green cardamom – 2
Cloves – 2
Cinnamom – 2 pieces
Peppercorn – 8-10
Ginger paste – 1 tbsp
Red chilli powder – 1 tsp or as per taste
Tomato puree or passata – ½ cup
Honey – 1 tbsp
Salt to taste
Fresh cream – ½ cup
Dried fenugreek leaves or kasuri methi – 1 tsp

Method:

  1. Mix all the ingredients for marination in a bowl. Marinate the chicken pieces in it overnight or for 4-6 hours in the refrigerator
  2. Preheat oven at 180 degree C
  3. String the chicken pieces into skewers and cook in preheated oven for 8-10 minutes
  4. Turn on the grill and let it char for another 4-5 minutes
  5. Heat butter in a fry pan and add whole spices. Saute for a minute
  6. Add ginger, garlic paste and fry for another minute
  7. Add tomato puree, red chilli powder, salt and 1 cup warm water. Bring to boil
  8. Reduce flame and simmer for 10-12 minutes
  9. Add the cooked chicken pieces
  10. Crush kasuri methi slightly in your palms and add to the gravy
  11. Add the honey and cream and mix well
  12. Simmer for 1-2 minutes and turn off flame
  13. Serve hot
