Baked Teriyaki Chicken


 

Teriyaki chicken is a simple chicken dish, ready in 30 minutes, perfect for weekday dinner. It requires just a handful of ingredients, readily available in pantry. The quick teriyaki sauce glaze that I make to add over the baked chicken takes this dish to a whole new level. Perfect tender, juicy meat with a sweet-savoury punch of flavour is an absolute winner. Serve teriyaki chicken with chinese fried rice for a perfect quick and easy dinner.

 

 

Ingredients:

Boneless chicken thigh – 500 grams
Soya sauce – 4 tbsp
Vinegar – 1 tbsp
Egg – 1
Grated ginger – 1 ½ tbsp
Garlic paste – 1 ½ tbsp
Honey – 1 tbsp
Brown sugar – 2 tbsp
Butter – 1 tsp
Salt to taste
Spring onion for garnish
Sesame seeds – 1 tsp for garnish

Method:

  1. Clean and cut the chicken into 1 inch strips
  2. Mix the chicken with egg, 2 tbsp soya sauce, vinegar, salt, and 1 tbsp ginger and 1 tbsp garlic. Insert chicken into skewers
  3. Preheat oven at 220 degree. Place the skewered chicken into the oven and bake for 20 minutes. Alternatively, you can cook the chicken skewers on a thick bottom frying pan
  4. To prepare the glaze, heat a small pan and add 1 tsp butter. Add  honey, brown sugar, 2 tbsp soya sauce, ½ tbsp ginger, ½ tbsp garlic and half cup water
  5. Bring to boil and let it reduce. Turn off the heat once it thickens slightly
  6. Pour the glaze over baked chicken
  7. Garnish with sesame seeds and spring onion
  8. Serve hot with fried rice
