Chilli Paneer


 

Hot and spicy chilli paneer is my absolute favourite when it comes to indo-chinese dishes. Pieces of paneer marinated and shallow fried, and finished in a chilli-capsicum stir fry is a sure winner for me. We love indo-chinese dishes but don’t prefer eating it in restaurants because of the usage of MSG and additives. This dish in particular is our favourite and I make it very often at home. Serve this easy to prepare dish as a started or pair it with vegetable fried rice or hakka noodles for a perfect meal.

Unlike the restaurant ones, I don’t deep fry the paneer cubes. I shallow fry them instead. The result is a healthier version of chilli paneer that tastes even better than the restaurant ones. Do try this, its absolutely delicious!

 

 

Ingredients:

Paneer – 250 grams, cut into cubes
Oil for shallow frying paneer

For marinating paneer:

Ginger paste – 1 tsp
Garlic paste – 1 tsp
Chilli sauce – 1 tsp
Soya sauce – 1 tbsp
Tomato sauce – 1 tbsp
Plain flour – 1 tbsp
Cornflour – 2 tbsp

For the gravy:

Oil – 2 tbsp
Ginger – 1 inch, finely chopped
Garlic – 2 cloves, finely chopped
Capsicum – ¾ cup, cubed (I have used a mix of red and green)
Onion 1 medium, cubed
Green chilli – 2-3, slit
Sprin onion for garnish
Soya sauce – 1 tbsp
Vinegar – 1 tsp
Salt to taste
Pepper – 1 tsp

Method:

  1. Mix all the ingredients for marination to form a thick batter using very little water
  2. Coat the paneer cubes in it and let it sit for 15-20 minutes
  3. Heat oil in a fry pan. Shallow fry the paneer pieces on both sides until it is golden. Set aside
  4. In another fry pan, heat 2 tbsp oil and fry ginger, garlic for a minute
  5. Add onion, capsicum, green chilli and fry for another 1-2 minutes on high flame
  6. Add vinegar, soya sauce, salt and pepper. Mix well
  7. Add the paneer and stir fry for a minute
  8. Turn off the flame and garnish with spring onion
  9. Serve hot
