Mediterranean Style Lamb Sandwich


Mediterranean style lamb patty served on panini bread with aioli are absolutely tasty, gourmet sandwiches that are perfect for parties, picnics, etc. They are quite easy to make and the patties can be prepared beforehand and frozen. Ingredients:

For the patty:

Lamb mince – 500 grams
Onion – 1 large, chopped
Feta cheese – ½ cup
Egg – 1
Garlic – 3 cloves, grated
Breadcrumbs – ½ cup
Olives – ¼ cup, finely chopped
Mint leaves a few, chopped
Salt to taste
Oil to shallow fry the patties

For the sandwich:

Panini bread
Tomatoes – cut into rings
Onions – sliced
Aioli sauce
Mustard sauce
Coriander leaves for garnish

Method:

To make the patty:

  1. Combine all the ingredients except oil in a large bowl and mix well. Take a handful of the mixture and shape it into a patty
  2. Place the patties on a lined tray and refrigerate for 30 minutes
  3. Heat a fry pan and add some oil. Places the patties on the pan and shallow fry for 3-5 minutes. Carefully flip the patties and fry on other side for a further 5 minutes or until thoroughly cooked

To assemble the sandwich:

  1. Cut the sandwich bread from the side and open it up. Cut a patty into two and place them on the bottom half of the bread
  2. Place tomato and onion slices on it. Top it with coriander leaves
  3. Spread aioli and mustard sauce generously over it and serve
