Parmesan-crusted baked fish


Simple, quick weeknight dinner that is easy-as-a-breeze to put together, is ready in 30 minutes and tastes great. This flavour-packed dish can be made with fish fillets of your choice and goes well with basa, salmon or tilapia fillets. Enjoy this delicious dish with salad, masked potatoes or coleslaw. You may add a spicy dip as well. Tastes great with these accompaniments as a complete meal or just by itself.

Ingredients:

Fish fillets – 500 grams (I used basa)
Parmesan cheese – ½ cup, shredded
Breadcrumbs – ¾ cup
Coriander leaves – ½ cup, roughly chopped
Salt to taste
Pepper – 1 tsp
Olive oil – 1 tbsp
Lemon – 1

Method:

  1. Preheat oven at 200 degree C
  2. In a large bowl, combine together cheese, breadcrumbs, coriander leaves, salt and pepper
  3. Add oil and combine well
  4. Press breadcrumb mixture onto one side of the fish fillets to form an even topping
  5. Place fish, crumbed side up, onto a baking tray. Bake for 15-20 minutes or until crumbs are light golden and fish is cooked through
  6. Squeeze the lemon juice onto it
  7. Serve warm with salad
In a large bowl, combine together cheese, breadcrumbs, coriander leaves, salt and pepper
Add oil and combine well
Press breadcrumb mixture onto one side of the fish fillets to form an even topping
Place fish, crumbed side up, onto a baking tray
Bake for 15-20 minutes or until crumbs are lightly golden and fish is cooked through
