Gobi Tikka


 

Gobi tikka or tandoori gobi is a simple, delicious dish and a perfect alternative for paneer tikka. Cauliflower florets marinated with yogurt and aromatic spices, and roasted to perfection is a great vegetarian starter or snack. Traditionally a tikka is roasted in a tandoor or clay oven. However, gobi tikka roasted in a oven tastes equally good. For a vegan alternative, replace yogurt with cashew and poppy seeds paste.

Next time you buy a cauliflower, ditch your regular dish and try gobi tikka and serve it with mint chutney. Or add this in your menu next time you have a barbeque party. I am sure you will love it!

 

 

Ingredients:

Cauliflower – 1 large
Turmeric – 1 tsp
Salt – 1 tsp
Capsicum – 1 cup, diced (I used a mix of red, yellow and green)
Onion – 1 medium, diced

For marinade:

Yogurt – ½ cup strained (I used Greek yogurt)
Ginger paste – 2 tbsp
Garlic paste – 1 tbsp
Chickpea flour / roasted Bengal gram flour – 1 tbsp
Red chilli powder – 1 tbsp or to taste
Cumin powder – 1 tsp
Coriander powder – 1 tsp
Garam masala – 1 tsp
Oil – 2 tbsp
Dried fenugreek leaves (kasoori methi) – 1 tsp
Salt to taste

 

 

Method:

  1. Cut the cauliflower into big florets
  2. Boil sufficient water in a large pot. Add salt and turmeric once it starts boiling
  3. Add the cauliflower florets and blanch them for 1-2 minute
  4. Drain the water completely and set aside
  5. In a large bowl, mix together all the ingredients for the marinade
  6. Add the cauliflower to half the marinade and mix well.
  7. Separately add onion and capsicum in the remaining marinade and mix well (see notes)
  8. Set aside for 15 minutes
  9. Preheat oven at 200 deg C
  10. Insert skewers carefully into the cauliflower stems
  11. Skewer the onion and capsicum pieces
  12. Roast the cauliflower, onion and capsicum skewers for 20-25 minutes or until crispy and completely done
  13. Serve hot with mint chutney

Notes

  • I use separate skewers as the cauliflower may take more time to cook than onion and capsicum
