Eggless Orange and Poppyseed Cupcakes


 

We are a big fan of cupcakes. They are just great for picnics, lunch boxes and untimely hunger pangs. Apart from the regular vanilla and chocolate cupcakes, tutti fruitty cupcakes are a regular from my kitchen. Recently I came across this recipe for orange and poppyseed cupcake and I wanted to try it. But I don’t prefer eggs in my cake as I do not like the eggy smell. So I replaced eggs with yogurt and slightly modified the recipe to suit our liking. They turned out just perfect.

Delicious, light, moist, crumbly, these eggless orange and poppyseed cupcakes are a breeze to make. These cupcakes are loved by everyone in my family and are perfect for all occasions.

 

 

Ingredients:

Self raising flour – 2 cups
Poppy seeds – 2 tbsp
Milk – 4 tbsp
Orange zest – 1 tbsp
Caster sugar – ½ cup
Orange marmalade – ¼ cup
Unsalted butter – 100 gm
Orange juice – ½ cup
Yogurt – ½ cup
Baking soda – ½ tsp

 

 

Method:

  1. Preheat oven at 180 degree C. Line a cupcake tin with cupcake liners
  2. Soak poppy seeds in milk and set aside for 10 minutes
  3. Whisk yogurt in a bowl and mix baking soda. Set aside for 5 minutes until the mixture becomes frothy
  4. In a sauce pan, melt together butter and orange marmalade on medium heat. Let it cool slightly
  5. In a large bowl, add self raising flour, sugar and orange zest. Stir together to combine
  6. Now add marmalade mixture, soaked poppy seeds and orange juice to the flour mix
  7. Add yogurt and mix well until all the ingredients are incorporated well
  8. Spoon in the mixture into prepared cupcake tin
  9. Bake in a preheated oven for 15-20 minutes or until a skewer inserted comes out clean
  10. Cool on a wire rack and serve
