Eggless Tutti Frutti Cupcake


 

Tutti frutti cake is a childhood favourite of most people in India. Soft spongy cakes studded with colourful tutti frutti brings back so many wonderful memories for me. We have all grown up eating them in tea time snacks, lunch boxes, picnics, long journeys… Or mostly just like that! They are so good and one of our favourite cakes.

While they are great while baked like a pound cake and sliced, the cupcakes are even better. Baking them as cupcakes makes them softer and adds a golden crunch to the outside which tastes great and are perfect for lunch boxes too.

Our winter is over and we are heading towards warmer weather. Which means more outdoors, picnics and holidays. This one is perfect to carry along! Take along a few eggless tutti frutti cupcakes wherever you go.

 

 

Ingredients:

Plain flour – 1.5 cups
Sugar – ½ to ¾ cup
Yogurt – 1 cup
Baking powder – 1 tsp
Baking soda – ½ tsp
Oil – ½ cup
Salt – one pinch
Tutti frutti mix – ¾ cup
Raisins – a handful
Vanilla essence – 1 tsp

 

 

Method:

  1. Preheat oven at 180 degree C
  2. Line a cupcake tin with cupcake liners
  3. In a small bowl add tutti frutti and raisins. Add 1 tsp flour to it and combine well so that they are completely coated with flour. Set aside
  4. In a large bowl, whisk together yogurt and sugar until sugar dissolves. Add baking powder and baking soda to it and mix gently. Set aside for 5 minutes
  5. After 5 minutes, the yogurt mix becomes frothy. Now add oil, vanilla essence and salt. Mix gently
  6. Add flour in batches and mix gently until all the flour is incorporated well
  7. Now add the tutti frutti mix and combine gently
  8. Spoon in the mixture into a lined cupcake baking tin
  9. Bake in preheated oven for 15-20 minutes until the cupcakes are completely done
  10. Transfer on a wire rack, cool and serve

Notes:

  • I bake these cupcakes with ½ cup sugar as I prefer them mildly sweet. You may increase the sugar depending on your preference
  • Once the yogurt is frothy, make sure you mix rest of the ingredients gently so that the mixture doesn’t loose air bubbles
  • Baking time depends on the oven. My batch of cupcakes took 18 minutes
  • To check if the cupcakes are done, insert a skewer and check if it comes out clean
  • Coating the tutti frutti in flour is important. If you don’t coat it, it will sink to the bottom of the cake
