Gadbad Ice cream


 

Gadbad ice cream is a very famous Indian ice cream sundae which originated in Udupi-Mangalore. I remember as a child our trips to Mangalore were incomplete without gadbad ice cream at Pabbas, which is a famous ice cream parlour in Mangalore.

Gadbad ice cream is served in a transparent glass with 3 layers of ice cream, a layer of jelly, fresh fruits and dry fruits. It’s a mix and match of flavours and texture  that work really well together.

Gadbad ice cream derived its name from the kannada  word ‘gadibidi’ which means ‘in a hurry’. The story behind it goes like this. Once there were few customers in Hotel Diana in Udupi, who ordered for ice cream. Due to limited stock, the hotel owner mixed in different flavours together with fruits, nuts and jelly, and served it in a transparent glass. It was loved by the customers and they came back for more. As it was prepared in a hurry or ‘gadibidi’, it got the name gadbad. It was them permanently included in the menu of the hotel.

Now coming to my gadbad ice cream, I have created three different flavours of gadbad ice cream, with three different combination of ice creams, fruits, nuts and jelly. But instead of the standard 3 scoops of ice cream used, I have used 2 scoops.

And without a doubt, we love all three combinations. Its difficult to say which one tastes better than the others. Why don’t you try it for yourself and find out!

 

Strawberry Gadbad

 

 

Ingredients:

Strawberry Jelly
Strawberry ice cream – 1 scoop
Vanilla ice cream – 1 scoop
Strawberries and kiwi – ¼ cup, cut into small pieces
Cashew, almonds, raisins – 3 tbsp, chopped
Glazed cherry
Wafer stick

Method:

  1. Prepare and set the jelly as per packet instructions. Cut the jelly into small cubes
  2. Take a transparent glass. Add a layer of jelly into it (around ¼ cup)
  3. Scoop in vanilla ice cream
  4. Top it with strawberries and kiwi, followed by chopped nuts
  5. Add a scoop of strawberry ice cream
  6. Top with glazed cherry and wafer
  7. Serve immediately

 

 

Chocolate Gadbad

 

 

Ingredients:

Raspberry Jelly
Chocolate ice cream – 1 scoop
Vanilla ice cream – 1 scoop
Wafer sticks – 2, cut into small pieces
Cashew, almonds, raisins – 3 tbsp, chopped
Glazed cherry
Wafer stick

Method:

  1. Prepare and set the jelly as per packet instructions. Cut the jelly into small cubes
  2. Take a transparent glass. Add a layer of jelly into it (around ¼ cup)
  3. Scoop in vanilla ice cream
  4. Top it with wafer piecs, followed by chopped nuts
  5. Add a scoop of chocolate ice cream
  6. Top with glazed cherry and wafer
  7. Serve immediately

 

Mango Gadbad

 

 

Ingredients:

Orange Jelly
Mango ice cream – 1 scoop
Vanilla ice cream – 1 scoop
Fresh Mango – ¼ cup, cut into small pieces
Cashew, almonds, raisins – 3 tbsp, chopped
Glazed cherry
Wafer stick

Method:

  1. Prepare and set the jelly as per packet instructions. Cut the jelly into small cubes
  2. Take a transparent glass. Add a layer of jelly into it (around ¼ cup)
  3. Scoop in vanilla ice cream
  4. Top it with mango pieces, followed by chopped nuts
  5. Add a scoop of mango ice cream
  6. Top with glazed cherry and wafer
  7. Serve immediately
