    Banana pancake recipe.

    Banana pancake is a pancake prepared with banana as the main ingredient. The recipe I am sharing is eggless/egg-free. The classic pancakes use eggs in them. These are made without eggs. Here, the simple ratio is to one egg replaced by one banana. Overripe bananas work best for this dish. The rich banana flavour complemented with a subtle hint of vanilla and chocolate is perfect.

    Banana pancakes are so quick and easy to make, they make a great weekday breakfast. And they are so delicious, you will love them on lazy weekends. I’d say they are perfect for any time of the day! This one is one of our family favourites.

    To make banana pancakes, I mash an overripe banana. I then mix it with milk, flour, sugar and vanilla. I then fold in the chocolate chips. I then fry a laddle full of batter in butter to make the utterly delicious, soft and fluffy pancakes.

    There are so many ways to serve them... icing sugar, maple syrup, Nutella, honey – we can get very creative here. Or add a dollop of vanilla or chocolate ice cream for that indulgent dessert for breakfast!

    Ingredients
      

    • 1 banana
    • 1 cup self-raising flour
    • ¾ cup milk
    • 1 tbsp sugar
    • 1 pinch salt
    • ¼ tsp cinnamon
    • ¼ tsp vanilla essence
    • 1 tbsp butter plus extra for frying the pancakes
    • ¼ cup chocolate chips optional
    • 1 tsp icing sugar for dusting

    Instructions
     

    • Mash the banana in a bowl until pulpy
    • Add milk, melted butter, sugar, salt, cinnamon, and vanilla essence. Mix thoroughly
    • Fold in the flour into this mixture
    • The mixture should be of pouring consistency. If it gets too thick, add 2-3 tbsp milk
    • Fold in the choco chips
    • Heat a frypan and add butter. Pour the pancake mixture using a ladle and let it cook until there are bubbles on top
    • Flip over and cook the other side
    • Dust icing sugar over them before serving

    Notes

    • You may use overripe bananas to increase the banana flavour
    • Serve with maple syrup or honey and a dollop of butter
