About cauliflower
A head of cauliflower goes a long way. It has always been a staple vegetable in Indian cooking. Of late, it has been known to replace grains too - cauliflower rice, pizza crust, white sauce... the list goes on.
Benefits of cauliflower
This humble vegetable is also a great source of nutrition and because of this impressive nutrition profile, it is considered a superfood. It is low in calories yet high in vitamins. It is high in fibre and a good source of antioxidants. Its ingredients may help strengthen bones and also may help prevent cancer. It is also very good for weight loss and is used to replace grains like rice and wheat as part of a low carb diet.
How to select and store cauliflower
Select cauliflower that has a tight and firm head. It should feel slightly heavy for its weight. The cauliflower florets should be compact and the leaves must be green and crisp. The colour of the head should be white or pale cream and it should not have any signs of brown and grey coloured spots.
Store the cauliflower in the refrigerator loosely packed in a plastic bag. This should keep it fresh for up to a week. If you want to freeze the cauliflower, blanch it first. Clean and cut the florets of the cauliflower. Place them in boiling water for 3-4 minutes. Drain the florets and place them in cold water to stop cooking further. Now place the florets on a tray and freeze them. Once they are frozen solid, place them in a freezer-safe bag, seal them and place them in the freezer. Freezing them this way will help in keeping the florets separate otherwise you will end up with a big lump of frozen cauliflower florets. Frozen cauliflower can be used directly without thawing. Make sure you adjust the cooking time accordingly.

Gobi Tikka: Gobi tikka is a popular appetiser made with oven-roasting cauliflower marinated in spices and yogurt mixture.

Aloo Gobi: Aloo gobi or potato and cauliflower curry is a very common weekday dish at my home. Potatoes and cauliflower cooked with onions, tomatoes, and a blend of aromatic spices is an absolute winner.
