Gadbad ice cream is a very famous Indian sundae which originated in Udupi-Mangalore. I remember as a child our trips to Mangalore were incomplete without a trip to Pabbas, which is a famous ice cream parlour in Mangalore.
Gadbad ice cream is served in transparent glass. It has three layers of ice cream, a layer of jelly, fresh fruits, and dry fruits. It’s a mix and match of flavours and texture that work really well together.
The name of this dish is derived its name from the Kannada word ‘gadibidi’ which means ‘in a hurry’. The story behind it goes like this. Once there were few customers in Hotel Diana in Udupi, who ordered for ice cream. Due to limited stock, the hotel owner mixed in different flavours together with fruits, nuts, and jelly, and served it in transparent glass. It was loved by the customers and they came back for more. As it was prepared in a hurry or ‘gadibidi’, it got the name gadbad. It was them permanently included in the menu of the hotel.
Now coming to my version of this famous ice cream, I have created three different flavours here, with three different combinations of ice creams, fruits, nuts, and jelly. But instead of the standard 3 scoops of ice cream used, I have used 2 scoops.
And without a doubt, we love all three combinations. Its difficult to say which one tastes better than the others. Why don’t you try it for yourself and find out!
