Grilled eggplant and feta pizza recipe.
Recently I had shared with you my recipe for Kadai Paneer Pizza. Today I am posting yet another favourite – grilled eggplant and feta pizza. An Indian twist on a classic Greek style pizza and you won’t believe how good it tastes till you try it. Eggplant is a very versatile vegetable with numerous health benefits. I use eggplant in curries, rice, and obviously, in pizza too.
I make the pizza sauce with Indian spices. For the toppings, I use grilled eggplant and feta cheese. I also top it with coriander leaves instead of fresh basil for that ‘desi’ touch. Deliciousness in every bite is the best way to describe this pizza. We absolutely love this pizza and I am sure you will too! Fire up the grill for this pizza!
I spice up the pizza sauce with tandoori masala powder, but you can replace it with garam masala. Both these spice blends have a lot of spices in common. If you are using garam masala, make sure you spice it up with some extra chilli powder or paprika as it is milder than tandoori masala.
