    Spinach is a superfood that is loaded with nutrients. This iron-rich green leafy vegetable is a great source of vitamins and minerals. Spinach is used in cooking curries, dals, fritters, and a huge variety of Indian food.

    It takes about four to six weeks from seeding to harvest making them a very easy-growing plant. Spinach is a cool-weather crop that does not grow well in summer. We have a veggie patch full of spinach and we get a big bag full of spinach every week. So we freeze some for the summer and early autumn months.

    Fresh spinach can be cleaned, blanched, and frozen for up to six months. They work just as well as fresh spinach does. So it is a great idea to blanch and freeze spinach during the harvesting season or when they are available in abundance in the market.

    1. Wash and clean spinach thoroughly

    2. Add spinach leaves to boiling water and blanch for 2 minutes

    3. Take the spinach out of the boiling water and immediately cool it down by pouring cold water/ice on the spinach

    4. Place the spinach in a salad spinner and remove all the excess water

    5. Alternatively, place the spinach in a colander and let it sit for 10-15 minutes so that all the excess water drains out

    6. Portion the spinach as needed and place in a freezer-safe bag and seal. Freeze and use as needed

    Ingredients
      

    • 1 cup spinach

    Instructions
     

    • Wash and clean spinach thoroughly
    • Take water in a large stockpot and bring it to a rolling boil
    • Add spinach leaves and blanch for 2 minutes
    • Take the spinach out of the boiling water and immediately cool it down by pouring cold water/ice on the spinach. This will prevent spinach from overcooking
    • Let the spinach sit in cold water for 2 minutes
    • Place the spinach in a salad spinner and remove all the excess water. If you do not have a salad spinner, place the spinach in a colander and let it sit for 10-15 minutes so that all the excess water drains out
    • Portion the spinach as needed and place in a freezer-safe bag
    • Remove as much air as possible from the bag and seal completely
    • Freeze and use as needed
