These spicy toasts or open sandwiches are an absolute delight. Anyone who has lived in Bangalore knows what I mean when I say Iyengar bakery style – khara buns, veg puffs, palya buns, khara biscuit, cream roll, fruit cakes… Oh, the delicious goodies that come out from these little stores…
To make masala toast, I saute onion and veggies together. I then mix them with chilli powder, chaat masala, and tomato sauce. I toast the bread on a tawa with butter and spread the cooled veggie mixture. That’s it! Simple and loaded with veggies. You may use white, multi-grain, or whole wheat bread depending on your preference. I like it with white bread though. You may add finely chopped green chilli for a more spicy sandwich. But I skip it so that it suits my DD’s taste buds.
Easy to make, they are ready in less than 15 minutes. Make them for weekday breakfast, a quick snack, or pack them for lunch boxes… Colourful, vibrant, healthy snack that everyone will love 🙂

1. Chop onion, capsicum, tomato and grate carrot
2. Saute onion in some oil
3. Add carrot, capsicum, tomatoes and cook
4. Turn off heat and add coriander leaves
5. Spoon 1-2 tbsp of the veggie mixture and spread evenly on toasted bread

I personally didn’t find this recipe good. Even I feel to add either boiled potatoes or grated panner in the vegetable filling. Rather than putting stuffing on the bread I would suggest to stuff the vegetable in to breads add some grated cheese and put in sandwich toaster.
Serve with mayonnaise, tomato catchup or mint curd dipping

Thanks for your comment. In this recipe, I have tried to reproduce the authentic Iyengar bakery masala toast (a famous bakery chain from Bangalore). This is an open sandwich. Also, potato/paneer is not used in this dish.
I will keep on adding more sandwich recipes – definitely a paneer sandwich will be on top of my list. Please keep checking back my website for new recipes.
