Lentils/dal are one of the first crops domesticated and have been part of the human diet since Neolithic times. The benefits of this humble food are exceptional - diabetes control, weight loss, improving digestion, healthy heart... the list is long. It is an excellent non-meat source of protein. Lentils are a very important part of Indian cuisine. From quick and simple dals to more elaborate dishes, they are an essential part of every Indian household kitchen. Over the last few decades, dal has become an important part of international food as well. Here, I will put together some traditional lentil recipes - simple and complex. Even if some dishes take more effort, it's absolutely worth it.
