Simple, quick weeknight dinner that is easy-as-a-breeze to put together, is ready in 30 minutes and tastes great. This flavour-packed dish can be made with fish fillets of your choice and goes well with basa, salmon, or tilapia fillets.
To make this dish, I make a mixture of breadcrumbs, parmesan cheese, coriander, oil and seasoning. I then coat the fish fillet with this mixture and bake it in a preheated oven. Very easy to make and is ready in no time.
Enjoy this delicious dish with salad, mashed potatoes, or coleslaw. You may add a spicy dip as well. Tastes great with these accompaniments as a complete meal or just by itself.

1. Fillet the fish
2. In a large bowl, combine together cheese, breadcrumbs, coriander leaves, salt and pepper
3. Add oil and combine well
4. Press breadcrumb mixture onto one side of the fish fillets to form an even topping
5. Place fish, crumbed side up, onto a baking tray
6. Bake for 15-20 minutes or until crumbs are lightly golden and fish is cooked through
