Vegetable Pulao

Vegetable pulao or pilaf is essentially rice and vegetables cooked together with flavorful and aromatic spices. The Karnataka style vegetable pulao is prepared in a different way, where the spices are ground together with greens and coconut. This one pot wonder is absolutely wholesome with veggies, greens and rice. A simple raita is a perfect accompaniment to this dish.

To make this pilaf, I grind together grated coconut, some greens, and spices into a smooth paste. I then cook in ghee/clarified butter and temper with cumin seeds and bay leaf. I saute onions in it and cook the ground paste until it is aromatic. I then saute vegetables in it. I add rice and water to it and cook until done.

Simple one pot dish loaded with vegetables served with raita is a perfect meal. Try it and I am sure you will like it as much as we do!

Basmati rice – 2 cups
Vegetables – 2 cups (I used carrot, peas, beans, potatoes, cauliflower)
Onion – 1 medium, finely chopped
Bay leaf – 2
Cumin – 1 tsp
Oil or ghee – 3-4 tbsp
Salt – to taste
Water – 4 cups

To grind together:
Coriander leaves – ½ small bunch
Mint leaves – a handful
Grated coconut – ½ cup
Green chilli – 2-3 or as per taste
Poppy seeds – 1 tbsp
Onion – 1 medium, diced
Ginger – 1 inch
Garlic – 3-4 cloves
Cinnamon – 1 inch piece
Cardamom – 3-4
Cloves – 2


  1. Wash the rice thoroughly and soak for about 20 minutes. Strain and keep aside
  2. Put all the grinding ingredients in a blender and grind to a fine paste using some water
  3. Heat a thick bottom vessel and add ghee. Add cumin seeds and bay leaves
  4. Once the cumin seeds splutter, add the onion and fry till onion turns golden brown
  5. Add the ground paste and cook till it’s aromatic and excess moisture dries up
  6. Add the cut vegetables, and salt and saute for another 2-3 minutes
  7. Add rice along with 4 cups of water. Bring it to boil
  8. Once the water boils, reduce heat to a minimum, cover and cook until the rice is completely done (about 20 minutes)
  9. Serve hot with raita


  • You can use rice cooker to make this dish. Once the spice mix and vegetables are ready, add it to the rice cooker along with rest of the ingredients and cook. If using rice cooker use 3.5 cups water for 2 cups rice
  • To make raita, whisk yogurt, mix finely chopped cucumber, onion and tomatoes. season with salt and some chilli powder
