    Shahi chicken or shahi murg is a rich and creamy chicken curry. ‘Shahi’ means royal, and this royal aromatic curry is loaded with flavours. Shahi chicken is quite different when compared to a regular curry because of its distinctive nutty flavour from almonds and cashew. This is a Mughlai dish that is very common across Indian restaurants outside India.

    To make this dish, I marinate the chicken with yogurt and spice. I then make an onion-tomato gravy to which I add a paste made with almonds, cashew, and poppy seeds. I cook the marinated chicken in this nutty gravy. Marinated chicken simmered in this nutty gravy is a sure winner. Garnish with almonds and raisins for a burst of nuttiness and mild sweetness to this royal dish.

    This, mild, nutty curry never fails to impress. It might sound very complicated, but is really simple to put together. Just a few additional few ingredients can change a regular chicken curry to a royal, unique one.

    2. Prepare the base gravy using onion, tomato, and spices

    3. Add almond, cashew and poppy seeds paste

    4. Combine well and saute for a few minutes

    Ingredients
      

    • 500 grams chicken I used a mix of leg piece and boneless thigh pieces

    FOR MARINATING THE CHICKEN:

    • 1 cup yogurt
    • 1 tsp turmeric powder
    • 1 tsp Kashmiri red chilli powder
    • 1 tsp shahi garam masala
    • 2 tsp ginger-garlic paste
    • 1 tsp salt

    FOR THE CURRY:

    • 8-10 almonds blanched
    • 8-10 cashew
    • 2 tbsp poppy seeds
    • 4 tbsp ghee
    • 2 large onion thinly sliced
    • 1 large tomato finely chopped
    • 1 tbsp ginger-garlic paste
    • 1 tsp coriander powder
    • 1 tsp cumin powder
    • 1 tsp Kashmiri red chilli powder
    • 1 tsp turmeric powder
    • 1 tsp shahi garam masala
    • 1 tbsp dried fenugreek leaves (kasuri methi)
    • Salt to taste
    • ½ tsp sugar
    • Almond flakes and raisins for garnish optional

    Instructions
     

    • Wash and clean the chicken. In a large bowl, combine all the ingredients for marination. Add chicken and mix well
    • Marinate the chicken for 3-4 hours in the refrigerator
    • Soak poppy seeds, blanched almond and cashew in some water for 30 minutes. Drain excess water and grind into a smooth paste. Set aside
    • Heat ghee in a fry pan or kadhai. Add onion and saute until they are golden brown
    • Add ginger-garlic paste and saute for 2-3 minutes
    • Add tomato, cumin & coriander powder, Kashmiri red chilli powder, turmeric, salt, and sugar. Saute until the tomatoes are cooked and oil separates
    • Add the ground paste and mix well. Saute for another 2-3 minutes
    • Add the marinated chicken and mix well. Add ½ cup warm water and bring to boil
    • Cover and simmer for 15-20 minutes until the chicken is completely cooked
    • Add shahi garam masala and mix well. Keep covered for 5 minutes
    • Garnish with almond flakes and raisins
    • Serve hot
