Baked Sev


 

Sev is a popular Indian snack that is in the form of crunchy noodles, made with besan or chickpea flour. They are usually deep-fried in oil. Baked sev is a healthier version of this snack which is very close to the deep-fried one when it comes to taste and crunch.

The thickness of the sev can be changed depending on your preference. A chakli press or extruder is used to shape the dough and it comes with attachments of different thicknesses. It can be a great tea-time snack or can be added to different chaats (which is a popular Indian street food). If using in chaats, make a thin version of the sev. This simple and easy snack just gets better with the baked version.

Ingredients
  

  • 1 cup besan (chickpea flour)
  • ½ tsp turmeric powder
  • 1 pinch hing (asafotida)
  • 1 tsp oil
  • 1 tbsp lemon juice
  • Salt to taste
  • Water to knead the dough

Instructions
 

  • Combine all the ingredients except water in a large bowl
  • Slowly add water and knead into a soft dough
  • Cover with a damp kitchen towel and let it rest for 15-20 minutes
  • Line a baking tray with baking paper
  • Fix the chakli press or extruder with the desired thickness plate
  • Preheat oven at 180 degrees C
  • Once the dough is rested, shape it into a cylinder and put it into the chakli press (see pictures)
  • Slowly press the sev onto the baking tray
  • Bake in the preheated oven for 8-10 minutes
  • Turn off the oven and open the oven door. Let the tray sit in the oven for a further 5 minutes
  • Remove tray and let the sev cool completely
  • Break into small pieces and store in an air-tight container

  1. Combine all ingredients in a bowl

2. Add water and knead into a dough

3. Fill the dough into chakli press

4. Press the sev onto a baking tray

5. Bake in a preheated oven as mentioned above

6. Break into small pieces once the sev is completely cooled
