Lauki Halwa


 

Lauki halwa or dudhi halwa is a rich, creamy dessert made with lauki or bottle gourd. It is made in a similar way as carrot halwa. Grated bottle gourd is reduced with milk, then sugar and ghee is added and it is finished off with nuts. Traditionally, lauki halwa is made with milk but I make it with almond milk which adds a nice nutty taste to it. And the sugar in the halwa gets slightly caramelised which gives this creamy halwa a slightly crunchy bite.

Bottle gourd is quite neutral in taste, adding almond milk makes this halwa more flavourful and since the halwa has nuts in it, this variation helps incorporate the nutty flavour well. Making this dessert is really simple but needs some time and patience. While bottle gourd is used mostly for making savoury dishes like dal and curries, this sweet dish is a good change.

Ingredients
  

  • 1 medium bottle gourd peeled and grated
  • ½ cup ghee
  • 2 cups almond milk
  • ¼ cup cashew and raisin
  • ½ to ¾ cup sugar depending on preference
  • A small pinch cardamom powder

Instructions
 

  • Heat 1 tbsp ghee in a pan. Fry cashew and raisins in it and set aside
  • In the same pan, add the grated bottle gourd and saute on medium flame until it slightly shrinks and raw smell goes
  • Add the almond milk and bring to boil
  • Cover and simmer until the milk evaporates and the mixture slightly thickens. This may take 45-60 minutes. Keep stirring every few minutes
  • Add sugar and mix well. Increase the flame and keep stirring until the sugar melts and slightly caramalises, about 4-5 minutes
  • Add the remaining ghee and mix well. Keep stirring until the ghee is fully incorporated
  • Keep stirring until all the moisture is evaporated and the ghee starts to ooze from the sides
  • Add fried cashew and raisins and cardamom powder
  • Mix well and serve halwa warm
