Curry leaves rice is made with curry leaves chutney powder as the base of the dish.  First let's make curry leaves chutney pudi / powder

Dry-roast curry leaves until they are dry and crispy. Set aside

Separately dry roast chana dal and urad dal, then coriander seeds and cumin seeds. Set aside

Dry roast sesame seeds, towards the end add hing and dry roast for few seconds

Dry roast garlic and then dry coconut and set aside

Add tamarind and salt. Let the ingredients cool down

Grind into a fine powder using a blender or mixie

Curry leaves chutney pudi is ready

Heat ghee in a frying pan and prepare the tempering

Add peanuts and fry until they are crispy

Add curry leaves chutney powder and salt

Add the cooked rice and mix gently

Cook on low flame for 5 minutes
