Hard boil eggs, peel, slice lengthwise

Fry sliced onions till translucent

Add ginger, garlic, curry leaves. Saute for 2 minutes

Add turmeric powder, chilli powder, garam masala, salt, and tomato ketchup

Saute for 2-3 minutes

Turn off heat. Cool completely

Cut puff pastry sheets in four parts. Brush water on sides. Place onion filling

Place half egg (yolk side down)

Bring the corners together to form a pocket

Brush egg white on the top of the puffs

Place on a lined baking tray

Place in preheated oven at 220 C  (430F) 

Bake for 15-20 minutes until the crust is golden

Serve hot with tomato ketchup
