Wash and clean spinach

Blanch in boiling water and puree

Heat ghee and add cumin seeds, bay leaves, black cardamom, and cloves

Add onions and fry till it is light golden

Add ginger, garlic, and green chilli

Once ginger, garlic are cooked add amchur, chilli powder, salt, and kasuri methi

Add tomatoes and cook for a few minutes

Add garam masala. Cook for 3-4 minutes

Add the spinach puree

Simmer for 5-6 minutes and set aside

Heat ghee and add lamb curry pieces

Cook on high heat till lamb is browned. Then add some water and salt and cook till lamb is done

Add the spinach gravy and cook for 4-5 minutes till done. 

Serve hot with Naan
