Ingredients ½ cup split Bengal gram (chana dal) 1 small onion sliced 2-3 cloves garlic 6-8 dry red chilli or as per taste 1 teaspoon oil Salt to taste

Red Chutney

Heat oil and fry the chana dal

Add dry red chilli, onion, garlic, and salt. Fry until the raw smell of garlic goes

Once the mixture cools, place in a grinder jar

Grind into a thick paste using little water

Ingredients  4-5 potatoes 2 large onions thinly sliced 2 teaspoon oil ½ teaspoon mustard seeds 1 teaspoon cumin seeds ½ teaspoon turmeric powder 5-6 curry leaves ¼ inch ginger grated 2-3 green chilli or as per taste Salt to taste 2 tablespoon lemon juice A few coriander leaves

Potato Filling (Masala)

Boil the potatoes

Lightly mash the potatoes

Heat oil and add mustard seeds

Add cumin seeds, curry leaves, green chilli, turmeric powder, and ginger

Saute for a minute

Add sliced onions

Saute until they are translucent

Add potatoes, salt, and 2 tablespoons of water.

Mix well and saute for 1-2 minutes

Ingredients 2-3 cups dosa batter Salt to taste Ghee to make the dosa Butter to top on the filling


Dosa batter fermented and ready for making dosas

Add salt to the batter and mix

Pour a ladle-full of dosa batter on the tawa

Spread the batter in a circular motion

Cook on medium heat until brown

Spread red chutney on top

Add some potato filling and a dollop of butter

Fold the dosa in half

Serve hot with chutney
