Sorghum is a variety of millet with a host of health benefits. It has been used in cooking for thousands of years. It is also being called the new quinoa.  I have made these cookies by combining sorghum with a nutrition rich vegetable - pumpkin

Steam pumpkin cubes till they are fully cooked

Mashed pumpkin, sorghum flour, sugar, pumpkin seeds, coconut oil, cardamom powder, salt

Knead well to form a dough

Pinch out a small portion of the dough and shape

Bake in preheated oven for 20-25 minutes

Cool completely on a wire rack

Perfect for afternoon tea or a quick snack
