Ingredients for masala paste

Grind into a smooth paste

Heat ghee. Add mustard seeds and cook till they crackle

Add cumin seeds, curry leaves, and bay leaves

Add onions and fry till  translucent

Add the ground paste and mix well

Cover and simmer until the masala is cooked and the oil beings to release

Add the vegetables and salt. Mix well

Add the soaked rice and water

Bring to a boil

Cover and simmer until the rice is completely cooked

Gently mix the rice

Serve hot with raita (yoghurt dip)
