Parmesan-crusted baked fish

Simple, quick weeknight dinner that is easy-as-a-breeze to put together, is ready in 30 minutes and tastes great.

  • 500 grams fish fillets I used basa
  • ½ cup parmesan cheese shredded
  • ¾ cup breadcrumbs
  • ½ cup coriander leaves roughly chopped
  • Salt to taste
  • 1 tsp pepper
  • 1 tbsp olive oil
  • 1 lemon


  • Preheat oven at 200℃
  • In a large bowl, combine together cheese, breadcrumbs, coriander leaves, salt and pepper
  • Add oil and combine well
  • Press breadcrumb mixture onto one side of the fish fillets to form an even topping
  • Place fish, crumbed side up, onto a baking tray. Bake for 15-20 minutes or until crumbs are light golden and fish is cooked through
  • Squeeze the lemon juice onto it
  • Serve warm with salad
