Grilled eggplant and feta pizza

Ingredients
  

For Pizza Base:

  • 2 cups plain flour
  • 2 tsp yeast
  • 1 tsp sugar
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp milk powder
  • ¾ cup water (warm), approximately

For Pizza sauce:

  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1 tbsp tandoori masala
  • ¼ cup tomato puree (passata)
  • Salt to taste

For topping:

  • 1 eggplant cut into thin circles
  • 1 tbsp oil to grill the eggplants
  • ¼ cup feta cheese
  • ¼ cup mozzarella cheese
  • A few coriander leaves for garnish

Instructions
 

To make the dough:

  • Combine flour, salt, yeast, sugar, milk powder together in a large bowl
  • Add oil and water and knead into a soft dough
  • Cover with a cling wrap. Let the dough rest in a warm place for 30 minutes or until it is double in size
  • Place the dough on a lightly dusted surface and knead again for 2-3 minutes
  • Divide into 4 balls, cover with a cling wrap and rest again for 10 minutes
  • Roll each ball into a circle, place on a baking tray, and prick with a fork. Let it sit for another 5 minutes

To make the sauce:

  • Heat butter in a small fry pan. Add garlic powder and tandoori spice mix. Saute briefly (30 seconds)
  • Add passata/tomato puree, salt, and bring to boil. Cover and simmer for 5 minutes. Set aside

To make the pizza:

  • Rub the eggplant slice with salt and set aside for 10 minutes
  • Pat dry the eggplant on a kitchen towel to remove all moisture
  • Heat a grill pan and apply oil. Cook the eggplant on both sides until grill marks appear
  • Preheat oven at 200 deg C
  • Apply the sauce on the pizza base evenly
  • Place the eggplant and feta cheese
  • Top with mozzarella cheese
  • Lightly brush the ends of pizza with some olive oil/butter
  • Bake for 15 minutes or until golden brown and the cheese bubbles
  • Garnish with coriander leaves. Slice and serve hot
